We built our reputation on this steak! Tender center-cut Filet Mignon, marinated in Bordelaise sauce and wrapped in a generous slice of thick bacon. Bake thawed @ 400° 8-10 minutes on the first side, then cook 5-8 minutes on the second side. Towards the end of cooking time, unwrap and lay the bacon flat on both sides to cook it thoroughly. Even better on the barbecue! 10 steaks.

    These NEVER DISAPPOINT! I just made them again to celebrate college graduation with the kids. I sear them on the stove on all sides then transfer them to a 350 oven and start monitoring the interior temp for 150 degrees between 15 and 20 minutes. I take the bacon off after searing and lay it in the pan next to the steaks. They come out perfect this way. My husband always asks what cut of meat it is because it’s so wonderful. But I know it’s not just the cut, these taste better than the other filet mignon I get from the store. Sometimes I make gorgorzola roasted garlic butter for the tops or I add some sauteed mushrooms.
