RIB EYE FILET

Also known as a Saratoga Steak, this is the center cut of the Rib-Eye.  When all of the surrounding fat and gristle (the spinalis) is removed, you have the Rib-Eye Filet.  Our USDA Prime cut has the incredible flavor of Rib-Eye, with the ultimate tenderness of Filet  Mignon.
